INGREDIENTS:
- Chicken- 1 kg
- Onion -1
- Capsicum- 1
- Tomato -1
- Green chillies- 1
- Ginger paste- 2 tsp, Garlic-4
- Scallion leaf as required for garnishing
FOR MASALA:
- Dried Chillies- 5
- Cumin seeds- 1 tsp
- Cardamom- 1 tsp
- Mace- 1
- Cloves- 4 or 5
- Cinnamon stick-1
- Pepper corns- 1 tsp
- Fennel Seed- 1 tsp
- Coriander- 1 tsp
- Coconut milk- 1 cup
- Coriander leaves for garnishing
- Salt per taste
- Turmeric powder-1 tsp
- Pinch of kesari colour powder (optional)
- Oil and ghee as per required
- Curd-2 tsp
NOTE: Its better take as a whole spices instead of powder .It will give awesome taste after roasted it.
METHOD:
- Turn on the stove and put the vessel on it
- Once the pan is hot, Put all whole spices in the pan and roast them for 5 minutes
- Turn off the stove and let it cool down.
- Once it cooled down, grind them well with the help of mixer/blender
- No need to add any water.Simply grind them as a fine powder
- Then add ginger and garlic paste
- Add 2 tsp water with it and grind them well
- Masala is ready
- Put the washed chicken in the big size bowl
- Add the grinded masala from the mixer
- Add 1 tsp of turmeric powder
- kesari color powder and curd
- Then add 1 tsp of salt
- Mix them well with your hands
- Let it marinate for 1/2 hour
- Once the chicken is marinated , lets started to fry
- Turn on the stove and put the vessel
- Once the pan is hot, pour some oil to fry
- Add 1 tsp ghee for extra aroma and softness
- Put the chicken in the heated oil.
- Let them cook for 10 minute with the close lid.
- Once the chicken is half cooked, let's turn down the other side with wooden spoon
- Close the lid and let them cook for 10 minutes.
- Chicken fry is ready and take them out and put them in the clean bowl.
- In the same pan,Put the onion in the remaining oil.
- Fry the onion, it it became golden brown colour
- Fry them until its raw smell goes down
- Once the onion is half cooked, add tomato and mix it well
- Then add Capsicum and green chillies
- Close the lid and let them cook for 3 minutes
- Once the vegetable's raw smell goes down,Put the fried chicken with it
- Mix them well
- Now add the coconut milk and mix it well.Let them cook for 3 minutes
- Once it ready, put some coriander leaves and mix them well
- Close the lid and let it cook for 2 minutes.
- Chettinad Chicken Fry masala is ready.
- If you want a stir-fry,let it cook for few more minutes until it became dry.
- Garnish it with scallion leaves. Delicious Chettinad fried chicken masala is ready.
